Green and Gold St. Patrick's Day Meringues

Delicious, melt in your mouth, St. Patrick's Day meringues. Super simple to make and with only a few ingredients. They can also be changed in colour and used for various other holidays. A very simple change but, just as delicious.

Ingredients

  • 4 egg whites
  • 1 cup sugar
  • 1/4 tsp lemon juice
  • 1 drop green food colouring
  • golden sprinkles

Instructions

  • Line a baking sheet with parchment paper and preheat the oven to 200 degrees F. Set aside.
  • Using an electric mixer, beat eggs on medium speed and mix for 2 minutes.
  • Add lemon juice and gradually increase the speed to high.
  • As you beat the egg mixture, slowly add your 1 cup of sugar.
  • Once mixture forms stiff peaks, add one small drop of green gel food coloring.
  • Using a piping bag, frost a dollop of meringue onto your lined baking sheet, about 1.5 inches in diameter.
  • Garnish top portion of each “medallion” with green sprinkles.
  • Bake for two hours. Once two hours has set turn off heat and let sit in the oven for 35-45 minutes.
  • Remove from oven and allow to cool – enjoy!

Notes

Calories are based on a yield of 50. Each medallion is approximately 16 calories. Enjoy these any time of the year and change the colour to make them festive for any holiday or occasion.
