Chicken Avocado Egg Rolls & Sweet & Spicy Dark Chocolate Bark

Avocado Egg Rolls and Sea Salt Chocolate Bark.
Cooking with Club House sea salt.

We love trying new recipes and most of all, we love flavourful food. As many of you know, I have been testing out Club House flavored sea salt grinders and I’ve shown you how to make a simple but, foolproof marinade or seasoning for your meats. Now, I will show you one of my husband’s favorite recipes with a twist!

Start with Wholesome Ingredients.

For his Chicken Avocado Egg Rolls you will need skinless, boneless chicken thighs (be sure to trim off the excess fat), large egg roll shells, shredded cabbage, shredded carrots, diced red peppers and Club House Sweet Onion Sea Salt Grinder. You can add any of your favorite herbs and seasonings to taste. I added pepper, garlic powder and a dash of adobo.

Don’t forget the soy sauce for later! You’ll also need a tablespoon of oil to sweat out your veggies and at least an inch of oil in pot to fry your egg rolls. You will also need avocados and an egg.

Sweat Them Then Add Meat.

Heat up your oil in pan and then add your veggies over medium heat. You’ll want to sweat them out (onions will be transparent) and then you can add your seasoning to veggies. Set aside veggies in your pan and add your chicken. Season and cook your chicken through and then sauté both veggies and meat together. Add soy sauce for umami. Add more Club House Sweet Onion Sea Salt and remove from fire and place in a separate bowl.

Prepare to Roll.

Pick out avocados that are ripe, cut them in half and peel the skin off. Cut them into thin slices and set aside. Prepare your egg wash in a bowl. Lay out your egg roll shells and add your filling in a straight line across, place your avocados on top and roll up the corner over the filling. Make sure the filling is secure and then fold in the sides. Add egg wash to corners as you go. Once the sides are rolled in tightly, begin to roll forward until the egg roll is fully sealed.

Fry, Serve and Enjoy!

Add your egg rolls into the oil and fry for about 4 minutes, about 2 minutes on each side. Remove from oil and place on a paper towel lined plate to cool. Cut and half and use soy sauce to dip or your favorite dip and enjoy! That sweet onion sea salt makes all the difference.

Got a Sweet Tooth?

Well, no look no further! You will need roasted unsalted cashews, 6 oz. of dark chocolate (I used baking chocolate) and 2 oz. of semi-sweet chocolate. My girls don’t like the full-out flavor of dark chocolate so I added semi-sweet to balance it out and one more ingredient that you will need is Club House Chipotle Sea Salt Grinder. Don’t be alarmed, it tastes amazing!

Melt It Baby!

To start, line a cookie sheet with parchment paper. You will need to chop up your chocolate to make it easier to melt. You will also need to set a pot of water filled about half way and bring it to a boil. Make sure your glass bowl width fits in your pot without falling in. Place your chocolate inside the bowl over the water and with a spatula, stir continuously. Add your chocolate in increments, that way it won’t seize.

Spice It Up.

If you are a fan of sweet, salty and spicy then you can add some finely grated sea salt into your chocolate mixture. If you prefer not to, you can add it as a topping. If you do choose to add it into your mixture, add in a pinch of salt and dash of cinnamon. If you don’t like this mixture, move onto the next step.

Spread, Cool and Relax.

Once your chocolate is completely melted, pour chocolate mixture onto cookie sheet and using the spatula spread evenly onto cookie sheet. Top with cashews and using the Club House Chipotle Sea Salt Grinder at its most coarse setting, garnish the chocolate. Place cookie sheet into the fridge to cool, grab a glass of wine or cup of java and relax.

Break and Enjoy!

To serve, you can use a knife to break apart the chocolate bark into your desired size. I went crazy with it and made uneven chunks. You can cut them in even squares but, I prefer them this way. The result is a sweet, salty and crunchy dessert with a hint of smokiness. It is absolutely amazing!
