Mini Pineapple Upside Down Cakes
One of my favourite types of cake is pineapple upside down cake. It’s soft and moist, and perfectly sweet with pineapple and a cherry on top. While having a nice slice of cake is always a good thing, sometimes limiting yourself to a bite is just as good. Also, mini pineapple upside down cakes are convenient to bring to get-togethers and summer BBQ’s.
The best part is that making these mini pineapple upside down cakes is so easy!
Read on for a step-by-step guide and serve these up at your next shindig.
Things You Will Need:

- Cooking spray
- 1 stick butter
- ½ cup brown sugar
- ½ can of chopped pineapples + 2 tbsp of its juice
- 12 maraschino cherries
- 1 cake box mix
- 3 large eggs
- 1/3 cup vegetable oil
- muffin pan
- mixing bowls
- hand mixers or stand mixer
Yields: 12 cakes
Step 1:
Preheat your oven to 350 degrees F. Spray your muffin pan generously with cooking spray and set aside.
Melt your stick of butter in a microwave-safe bowl. Add brown sugar and mix thoroughly.
Add the butter and brown sugar mixture into each section of your muffin pan. Place one maraschino cherry in the center of each and then surround it with pieces of pineapple.
Step 2:
Using an electric mixer, beat together cake mix, eggs and vegetable oil until ingredients are thoroughly combined. Pour into each individual section of your muffin pan.
Step 3:
Bake for 15 to 20 minutes and allow to cool for 15 minutes. Turn the pan upside down on a baking sheet and your cakes should pop out, revealing the cooked brown sugar, pineapples, and maraschino cherry. Enjoy!
