Mama Milagro’s Potato Soup
This is THE best potato soup recipe because it’s wholesome, warm, and comforting. It’s one of my daughters’ favourite recipes and is always on rotation.
For me, it’s a reminder of how my mom’s easy and rustic recipes kept us nourished when we were young. She actually learned this recipe when she worked for a healthy restaurant when we first moved to Canada.
Well, I love eating wholesome meals and fueling my two girls’ little bodies.
But I also love a bargain. We do most of our shopping at Whole Foods Market. They always have weekly coupons to save money while eating whole foods.
With the busy bustle of everyday life, cooking at home can be stressful. As a result, budgets are definitely stretched, especially with the holiday season in full force.
Whole Foods Market is committed to providing an affordable mix of products and ingredients, along with helpful tools and in-store service to make grocery shopping and cooking more enjoyable.
I decided to take the challenge to make a Healthy Value Meal that was wholesome, packed with nutrition, and affordable.
I set off to Whole Foods to find a meal that would be about $4.00 a portion.
Warm and Wholesome
I decided to eat a meal that we grew up on. One that to this day fills me with warm nostalgia. It is a filling meal that my mom used to make for us.
One that she adapted from when she used to be a cook at a small Chatham, Ontario restaurant, Natural Food Emporium, and a recipe I then adapted from her.
We called it Mama Milagro’s Chunky Cream of Potato Soup with Chicken Salad pitas. It’s THE perfect meal.
Well, I set off and bought 365 organic sour cream, Whole Foods Whole Wheat Pitas, a bag of organic potatoes, spinach, and cheese.
I already had a few items for this recipe in my pantry, and you probably do too!
A delicious, creamy, chunky and wholesome cream of potato soup paired with a tasty chicken salad pita.
For Potato Soup
- 365 sour cream or your favorite kind
- 1 cup milk, I used 1%
- 6 large potatoes
- 2 tbsp butter or margarine
- 1 onion finely chopped
- 2 tbsp chicken bouillon
- 1 tbsp light olive oil
- 1/2 tsp garlic powder
- salt and pepper to taste
- 5 strips of bacon to top soup with, (optional)
For Chicken Pitas
- 4 seasoned baked chicken breasts
- 1 bag of Whole Foods whole wheat pitas
- 1/2 bag of organic spinach
- cheese, (to liking)
- 4 tbsp light mayo
- 1 tsp of parsley
- Spike seasoning, (optional)
- Wash and peel all of your potatoes and dice them into medium-sized cubes.
- Finely chop 1 onion, use 1/2 for your soup and the other half for your chicken salad.
- Take 2 tbsp. of butter and begin melting it in pot on low heat, add 1 tsp. of parsley, 1/2 chopped onion, 1/2 tsp of garlic powder and 1 tbsp. of light olive oil. Sautee the onions until almost transparent.
- Switch to medium heat. Add chopped potatoes into mixture and stir until fully covered. Add water until potatoes are covered and let it come to a rolling boil. Add 2 tbsp. of bouillon and stir until dissolved.
- Once it has boiled, add 1/2 of the sour cream container. Stir well until dissolved. Let it come to a complete boil, making sure you stir often.
- Add 1 cup of milk, stir and bring to simmer on low heat. Once the soup has thickened, it's ready!
- Top with Spike seasoning and cheese. (optional)
- For pitas, season 4 chicken breasts to taste, bake and chop into cubes.
- Add 4 tbsp. of mayo into cubed chicken breast, add Spike, salt and pepper, 1/2 onion and mix until chicken is fully covered.
- Cut pitas in half, fill with chicken salad, spinach and cheese.
- TIP: When you reheat, add more sour cream and then more milk to make it to the consistency you want as it will thicken if it sits overnight.
I use Spike seasoning when I mix the chicken and mayo together. I also sprinkle it on my potato soup. It's delicious!

Enjoy a Bowl
This soup is a huge hit in our home. While the soup is meant to last for two meals a person, it doesn’t last one day in our house. But, the girls gobble it up.
It reminds me of our childhood growing up and coming home to my Mom’s delicious Cream of Potato soup. This soup warms my tummy and my heart every time we sit around the table and enjoy it.
It also reminds me so much of my Mom and how much she’s helped me grow as a cook. But, of course, we also made off like bandits, and each portion is about $4.91, with a bonus FREE second helping!
Mind you, I did have the seasonings and basic things like milk and margarine in my home already.
Making healthy and easy value meals doesn’t have to be complicated. It’s actually quite simple. So you can take the challenge and make this or other value meals for your family.
