Buddy the Elf Cupcakes

Christmas is my absolute favourite holiday. It’s a wrap-up of a long year and a chance to wind down with your loved ones.

Like everyone, we have our traditions. One of ours is to watch Elf and bake together.

Inspired, I decided, why not bring our favourite Christmas movie to life with funfetti Buddy the Elf cupcakes?

I’ll be honest. I will watch Elf a couple of times a year. It’s just such a heartwarming story. Plus, I absolutely adore Will Farell.

He just makes me feel good and makes me laugh. No matter how many times I see him going up the escalator, saying, ‘I’m a cotton-headed ninny muggins,’ and packing spaghetti with syrup in plastic bags makes cracks me up.

If Elf is one of your holiday traditions, or you just want to make people crack up when you bring these to one of many holiday events, this is for you.

Step 1:

Prepare the Funfetti cupcakes according to the mix’s directions. Most cake box mixes will yield 24 cupcakes.

Allow cooling before decorating.

Using an electric mixer, beat together butter, confectioners’ sugar, and milk. These ingredients will make up your buttercream frosting.

Once the ingredients start mixing smoothly, add yellow gel food coloring. Continue mixing until tinted.

Place yellow buttercream in a piping bag and frost a dollop of buttercream in the center of each cupcake. Set your piping bag aside.

Tint your white fondant with green gel food coloring and knead. You may want to put cornstarch on your fingers to keep it from sticking.

Step 3:

Roll 24 fondant spheres, about 1 ½ inch in size. Once the spheres are formed, start shaping them into ELF hats.

To do so, flatten each sphere slightly than give it a point at one end.

Curve the point to give it the illusion that the hat is ‘flopping over.’ Then, flatten the bottom and give it a triangular shape.

Step 4:

Insert one toothpick in each cupcake, with about ½ an inch of it exposed. Then, insert your fondant hat through each toothpick.
