Zesty Guacamole Macaroni and Cheese

Getting the kids to enjoy tasty meals that have a punch of healthy nutrients is a must in our home. They are growing kids who are active and definitely need wholesome meals. Gabby enjoys cooking and she decided to shake up one of her favorite recipes and show you one of her go-to after school snacks with the help of Sabra Classic Guacamole.

To keep kids excited about the food they eat, it’s always a great idea to get them involved in the cooking process. Whether you supervise them in the kitchen and they cook a dish or you help them every step of the way, they love it. When you step outside of the box and use non-traditional ingredients and add them to your favorites, you’ll be pleasantly surprised. These recipes will not disappoint!

Zesty Mac and Cheese.

Before you pass this by, give it a chance. You’ll be shocked at how delicious it is and how much the kids will love it. After all, the avocado is said to be nature’s butter and the creaminess will put your boring old macaroni and cheese over the top. We love spicy food in our house and this mac and cheese has a flavourful zing and a pop of spice! Of course, you can always gauge the heat by choosing your favorite cheese. Whether you choose spicy or not spicy at all, it’s up to you.

If you aren’t familiar with Sabra’s guacamole, you have been missing out. It’s made from authentic Mexican recipes using Fresh Hass Avocados coarsely diced for a chunky, homestyle taste. I love the “Ready-to-Serve” trays with Easy-Peel film seals. The classic recipe is the perfect balance of ripe avocado, cilantro, tomato, citrus and garlic flavours. They have a spicy guacamole for all my fellow spice connoisseurs.

Zesty Mac and Cheese

Zesty Mac and Cheese

Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes

This is a delicious mac and cheese recipe that has a zesty twist. You'll love it and your kids will love it even more. Easy to make and with the help of Sabra taking care of the flavours for you, it's ready in no time.

Ingredients

  • 2-3 TBSP of Sabra Classic Guacamole
  • 1/2 lemon for lemon juice
  • 2-3 cups of elbow macaroni pasta
  • 1 cup of 1% or 2% milk
  • 2 TBSP of unsalted butter
  • 2-3 cups of Tex Mex shredded cheese
  • 2 TBSP of all-purpose flour
  • 1/2 cube of chicken stock
  • Salt and Pepper to taste
  • 1 saucepan
  • 1 pot
  • 1 wooden spoon
  • 1 spatula
  • 1 whisk
  • 1 food processor

Instructions

Cheese Sauce

  1. Take your 2TBSP of butter and melt on medium heat. Slowly add in 1/2 of the flour and whisk until it turns to a paste.
  2. Once it is a paste, add your milk and chicken stock. Stir well.
  3. Begin to add shredded cheese and stir often.
  4. Once it starts to thicken, begin to fold the cheese sauce.
  5. Add salt and pepper to taste and remove from heat.

Pasta

  1. Boil water and add macaroni.
  2. Cook to preference.
  3. Drain and add cheese sauce and mix until completely blended.
  4. Set aside.

Guacamole Sauce

  1. Take 2-3 TBSP of Sabra Classic guacamole and place into food processor.
  2. Add lemon or lime juice and blend. (This will help to stop browning.)
  3. Sauce should be pureed but, not runny.
  4. Add to your mac and cheese and fold until completely blended.
  5. Serve with bread and enjoy.

While we have nothing against mayonnaise when we can avoid using it and substitute it for something healthier–we totally do! Gabby is an active kid and that means she needs fuel to keep her body going. She has a healthy appetite and I make sure she is taking in enough protein, good fats, and nutrients that will satiate her hunger but, her body’s needs as well. Mimi is always on-the-go so, she definitely needs the energy!

She made this sandwich by herself and all I had to do is make sure that I prepped the fridge with everything she needed. We usually prep on Sunday evenings and it helps throughout the whole week. It’s simple to bake chicken and then chop it up and leave it in the fridge just for this purpose. You can chop up the cabbage and store it in containers and of course, you can have Sabra guacamole in family size or individual sizes.

In the video, she will show you how to make the Zesty Mac and Cheese and how a little prep can go a long way. It helps the evening routine when the kids can help make a quick snack before dinner. They shared this sandwich and went on to do homework and after-school activities on their own. Not only that but, they feel accomplished that they were able to do so!
