Thing 1 and Thing 2 Cookie Recipe

I’ve always been a big believer that you only live once. Once you lose that curiosity that you inherently possess as a child, life can become a bit dull. That is why I love Thing 1 and Thing 2. While most people will find them to be mischievous, I love that they like to have fun.

It is the very reason that I just had to pay them homage with this very Thing 1 and Thing 2 cookie recipe! While you’re here, take a look at some Dr. Seuss crafts that will help you celebrate Dr. Seuss Day. It is also Dr. Seuss’ Birthday too!

Of course, you have to make this Cat in the Hat craft too. You can even use it as a bookmark for National Read Across America Day. Mimi and I will be re-reading the Cat in the Hat book, it’s a must!

Plain sugar cookies ready to be iced, a bowl of bright blue icing and red and white fondant are pictured.

Step 1:

Roll out your cookie dough on a floured surface and cut out 12 cookies with a circular cookie cutter (about 3 inches in diameter). Place cookies on a lined baking sheet and bake according to recipe’s directions. Once the cookies are done baking, allow to cool completely on a wire rack.

Icing is added to sugar cookies and red fondant circle is added on top.

Step 2:

Roll out your red fondant on a clean, non-stick surface (cornstarch should be able to do the trick). Cut out 12 circles, using the same cookie cutter that you used for your cookies. Press one red fondant circle on each cookie.

Another smaller white fondant circle is added to the red fondant circle and Thing 1 and Thing 2 is being written on them with a food marker.

Step 3:

Now, roll out your white fondant and cut out 12 circular pieces using a 2-inch cookie cutter. Press one white fondant on each cookie. Using your edible black marker, write out “Thing 1” on every other cookie – right in the center of the white fondant. Do the same but writing “Thing 2” for the rest of your cookies.

Step 4:

Using an electric mixer, beat together butter, confectioners’ sugar and milk. Mix on medium speed. Gradually increase the speed to high and once the buttercream starts to form, tint it with blue gel food coloring.

Scoop your blue buttercream into a piping bag with Wilton icing tip #233 attached. Frost the top of each cookie. Serve and enjoy!
