One of the things that we strive to make happen every single day is to eat all of our meals together as a family. With how busy life gets with the girls at school, sports, and clubs, we don’t always get to sit down for every meal.

But, cena? We never miss it.

The evening is special to us. It’s a time to unwind, catch up on our day, and of course, catch up on all the juicy chismes and gossip.

Well, because, the tea is always good.

We Spill the Tea Over a Cup of Coffee

So, dinner at our house is always spent together and as often as we can, we invite my parents to join in.

During the last few weeks of summer we spent two weeks away in Chicago and then we came home for one day and then met up with my brother and sister in Las Vegas for a week.

With the uncertainty of Hurricane Dorian, our original plans to visit Orlando changed. Regardless, we spent a great week with my siblings but, we were away from my parents for 3 weeks. We don’t go a day without speaking, so as soon as we could, we planned to have dinner together to catch up.

Bringing Familia Together

As always, we made a simple meal (we made chicken tacos), put on some lively music, and enjoyed. Once it dwindled down, one of us got up and grabbed el pan dulce and prepared the café. Sometimes, we add a bit of cinnamon and there is always cream or leche at hand.

You know the moment the coffee comes out, it’s time to unwind.

The kids go off to play and the adults stay seated, sip on their cafécito, and just enjoy each other’s company. This time was no different—after being apart for three weeks, we had a lot to catch up on.

Enjoying Every Second

This past year has been really tough on our family, and there was a point where we almost lost my dad. That’s why I enjoy these special moments with family.

They really are priceless, and these shared moments are ones that stay with you for life. We had so much fun and we had tons of laughs.

As usual, my mama stays in the kitchen. As she served the coffee, I thought about the flavorful and rich taste of Nescafé Clasico and I had a light bulb moment.

I decided that I would make and spike one of my favorite cakes, Tres Leches, with coffee for the next time we get together.

Coffee Spiked Goodness

A cross between traditional Tres Leches with a little hint of tiramisu. Genius! At least, I think it is—and my fellow Latinos, you’ll love the NESCAFÉ touch.

A coffee spiked cake served with a cup of coffee? Coffee overload, you say? I think not!

Us Latinos have prepared for these moments our entire lives. The richer and bolder our coffee, the better!

What I love about this Coffee Tres Leches cake is that it soaks up all the cream and coffee.

When you take a bite, it’s soft and moist in all of its coffee-creamy goodness. Read on for the entire recipe below.

Making Nescafe Clasico with coffee and water.

Things You Will Need for the Cake:

  • 5 eggs
  • 4-1/2 oz. (1 cup) unbleached all-purpose flour
  • 1-1/2 tsp. baking powder
  • 1/4 tsp. kosher salt
  • 1 cup granulated sugar
  • 1/3 cup whole milk
  • 3/4 tsp. pure vanilla extract

For Soaking Cream:

  • 1 14-oz. can sweetened condensed milk
  • 1 cup evaporated milk
  • 1/2 cup heavy cream
  • 1/2 cup strong brewed coffee
  • Pinch of salt

For Frosting:

  • 1 tsp. Nescafé Clasico
  • 2-1/2 cups heavy cream
  • 2 Tbs. confectioners’ sugar
  • 1/2 tsp. pure vanilla extract
  • Chocolate shavings for topping

Preheat the oven to 350°F; make sure that you place a rack in the center of the oven. Using cooking spray (I prefer the olive oil), spray the bottom and sides of a 9×13-inch baking dish.

You can use a ceramic or metal pan as well.

Proceed to line the bottom with parchment. Give the parchment paper a little spray so that the cake won’t stick and it peels easier after it’s cooled.

Take the Nescafé Clasico and water (follow the instructions to make 1 cup, you’ll need 1/2 cup) and mix until combined.

Grab your sifted flour, salt, baking soda, and baking powder and add it to a bowl or your mixing bowl attachment. You can set this aside for later!

Take 5 eggs and separate them. Place the egg whites into a medium mixing bowl and the egg yolks into a larger bowl.

Let’s Make It Fluffy

Take your electric mixer and start beating the egg yolks with 3/4 cup (set aside 1/4 cup) of the sugar on medium speed. The goal is to get the mixture rich and velvety. The mixture should get a bit paler.

Mix for 2 minutes.

Proceed to add the milk and vanilla and beat until fully mixed for 1 minute more.

If you have spare beaters, you can move on to the next step, if you don’t, clean and dry your attachments. After that, start beating the egg whites, but gradually increase the speed to HIGH.

You’ll know that you’ve done the job right when the mixtures start to peak softly. It usually takes about 2-3 minutes.

Remember that 1/4 cup of sugar you set aside? Now you can add the 1/4 cup of sugar in a stream.

Continue to beat on HIGH for 1 or 2 minutes. Once it’s ready, you’ll see firm peaks. Just make sure that they don’t look too dry.

Prep It

Grab your whisk and pour 1/3 of the dry ingredients into your wet mixture. Mix, mix, mix until it is fully combined.

Carefully fold 1/3 of the egg whites into the mixture. I use my silicone spatula so I can get the sides easier and not over-combine the mixture.

Repeat this step two more times until you’ve mixed all of the dry ingredients and egg whites.

Mix until completely combined. You’re almost on your way to coffee goodness!

The cake is on a cooling rack after it has been fully baked.

Bake It

Once your mixture becomes a batter, it’s time to pour! Grab your pan, pour the batter, and bake it for about 20-25 minutes or until golden. As always, test it with a toothpick. It should come out dry and clean.

After it’s baked, you can place it on a cooling rack and let it cool. Check on it and once it’s cool enough to touch, you can flip the pan, remove the parchment, and place it on the rack to cool completely.

Now Comes the Fun Part

Time to soak that beautiful cake you just made with coffee-spiked dreamy goodness. But first, we have to make the tres leches mixture.

Place the cake back into the pan carefully.

Just a fun fact, this cake is perfect to make ahead of time as it refrigerates well and tastes better the more soaked it gets.

Set the stove to medium-low; this will avoid burning the mixture because we don’t want that. In a saucepan (I used a 2-quart), combine the evaporated milk, condensed milk, heavy cream, salt, and the Nescafé Clasico.

Blend all the ingredients well.

Place it on the stove for about 5 minutes; once it gets all bubbly around the edges, you can remove from the heat.

Grab a heatproof measuring cup (4 cups is big enough) and pour in the mixture. You will use the cup for easy pouring over the cake.

Poke It and Soak it

Using a toothpick, start poking the cake all the way to the bottom. Separate the holes into about 1/2-inch spaces. Now you can use the measuring cup with the coffee cream mixture and pour it over the cake in intervals.

Like a sponge, let it soak up the fluid before you add more of the mixture. Keep pouring until there is no mixture left.

Perfect to Make Ahead

Once you’ve used all of the coffee cream (coffee-spiked tres leches mixture), you can loosely wrap the pan and place it in the fridge. If you are planning to enjoy it the same day, make sure you give it at least 2-3 hours for optimal results.

As I mentioned before, this is a terrific make-ahead cake. So, if you have family and friends coming, make it the night before and they’ll be none the wiser.

Ice It

Now this is my favorite part! Take some milk chocolate and shave it coarsely; this will be your topper for texture!

Grab 1 tbsp of Nescafé Clasico and combine it with 2 tbsps of heavy cream; mix well. Then, add the remaining 2 1/2 cups of cream and begin to beat with your electric mixer.

You’ll notice that it will start to get thicker. Once it does, add the vanilla and sugar and beat until you see firm peaks in the mixture. This takes about 3 minutes or so.

As with any whipped cream, you don’t want to overbeat—so be careful to watch for those peaks.

Grab a spatula and spread the cream on top of the Coffee Tres Leches cake. Once you’ve spread it evenly, you can top it with your chocolate shavings and you’re ready to serve and enjoy!

Share a Little Love

Now that you’ve made this delicious cake, it’s time for the best part. Cut it up into squares and start passing it around. Oh, and don’t forget your cup of cafécito to wash it down because coffee is life.

A delicious and creamy Tres Leches cake with a twist. Spiked with coffee for that java kick any coffee lover will flip for! Perfectly decadent, and so easy to make. You can even make it ahead of time and serve after dinner with, you guessed it, a cup of cafecito!

Ingredients

Cake:

  • 5 eggs

Take in the Moments

As I hold my warm coffee cup with both hands, close my eyes, and breathe in that familiar NESCAFÉ® CLASICO™ aroma, I’m taken back to early mornings in my childhood home.

Where I could smell my mom and dad’s cafécito as they chattered and got ready for the day.

I hear my papa’s spoon stirring and clinking as he mixed the crema into his coffee.
