Granola is something that is always in our pantry. It makes it easy to give our yogurt parfaits some crunch, sprinkle over baked apples, or just to munch on for a snack.
The beauty of granola is it its versatility. You can add so many different toppings and flavours, the possibilities are endless.
During the fall season, I love to make our granola with fall flavours, pumpkin, cinnamon, and nutmeg. It’s warm, seasonal, and delicious.
This granola checks off all those boxes. Read on for the full step-by-step recipe and instructions for this Pumpkin Maple Pecan Granola.
Things You Will Need:
- Medium saucepan
- Mixing spoon
- Large bowl
- Nonstick baking sheet
- Airtight container (if storing)
Ingredients:
- ¼ cup of coconut oil
- ¼ cup of maple syrup
- ½ cup of pumpkin puree
- 3 cups of old fashioned oats
- ½ cup of chopped pecans
- 1 cup of granola
- ¼ cup of pumpkin seeds
- 1 tsp of ground cinnamon
- ¼ tsp of ground nutmeg
Preheat the Oven and Make the Mixture
Preheat oven to 300 degrees F.
Add coconut oil and maple syrup in a medium saucepan. Melt and mix over medium heat. Remove from heat.
Add pumpkin puree and mix until fully incorporated. Set aside.
Mix the Dry Ingredients
Add oats, granola, and pumpkin seeds in a large bowl. Pour pumpkin puree mixture into the bowl. Fold all ingredients together. Sprinkle with cinnamon and nutmeg and mix some more.
Bake and Enjoy
Spread the granola mixture onto a non-stick baking sheet. Bake for approximately 35 minutes and allow to cool (about 15 minutes) before serving. Enjoy!
Can You Store Granola?
Yes, you can store it in an airtight container for up to 2 weeks, either in the fridge or on the counter. As always, please visually inspect your food before consuming it.
Can Homemade Granola Be Frozen?
You can freeze homemade granola for up to 3 months in an airtight container. You can thaw it overnight in the fridge before use.
What Mix-Ins Can You Use for Homemade Granola?
Granola is versatile. You can add chocolate (white, chocolate, dark, peanut butter, caramel) raisins, dried apricots, dried cranberries—pretty much any dried fruit.
Coconut, almonds—any type of nuts! You can also use different types of oils and nut butters. Some great ones are olive oil, canola oil, and melted butter. You can also use peanut butter and almond butter.
Make sure to add in chocolate and dried fruit after granola is baked and cooled.
