Green and Gold St. Patrick’s Day Meringues

St. Patrick’s Day Meringues

St. Patrick’s Day is right around the corner. It is one of those fun holidays that everyone loves. Everything is green and you’re always looking for that pot of gold at the end of the rainbow.

We decided to get a little festive. Instead of a pot of gold, how about a bowl of green meringue medallions with a touch of gold? You won’t get rich with these but, they’re sweet and best of all, you can share the “wealth”!

I always thought that making meringue was difficult. Just like I thought making my own hazelnut spread would be tough. It’s not.

It just seems so delicate and elegant that I never gave it a try. The truth is, it’s incredibly easy to make. The result is fluffy, sweet, melt in your mouth goodness. These St. Patrick’s Day meringues turned out great!

Step 1:

Line a baking sheet with parchment paper and preheat the oven to 200 degrees F. Set aside.

Using an electric mixer, beat eggs on medium speed and mix for 2 minutes. Add lemon juice and gradually increase the speed to high.

Step 2:

As you beat the egg mixture, slowly add your 1 cup of sugar. Once mixture forms stiff peaks, add one small drop of green gel food coloring.

Step 3:

Using a piping bag, frost a dollop of meringue onto your lined baking sheet, about 1.5 inches in diameter.

Garnish top portion of each “medallion” with green sprinkles.

Step 5:

Bake for two hours. Once two hours has set turn off heat and let sit in the oven for 35-45 minutes.

Remove from oven and allow to cool – enjoy!

Delicious, melt in your mouth, St. Patrick's Day meringues. Super simple to make and with only a few ingredients. They can also be changed in colour and used for various other holidays. A very simple change but, just as delicious.

Notes

Calories are based on a yield of 50. Each medallion is approximately 16 calories. Enjoy these any time of the year and change the colour to make them festive for any holiday or occasion.

Get the Luck of the Irish

They may not be real gold but, they are definitely a treat. Once they melt in your mouth, you will really feel lucky! What I love about this dessert is that it is so simple. These are great to bring into the office, for a school treat, or just to enjoy at home.
